SO. What are bitters?
Bitters are spirits that are infused with herbs, roots, fruit and leaves. They typically consist of water and alcohol. Bitters are wonderful for your digestion, to be taken before a meal (apertif) or after a meal (digestif).
Bitters are typically cooling in nature, and can help with overindulgence, cravings and poor digestion. They support our liver, spleen, gallbladder and pancreas.
+Since Bitters are considered "cooling," and therefore suitable for "hot" conditions such as inflammation (including arthritic conditions), dryness, flushing, tension, headache and fever, for example. Other indications for bitters include chronic candidiasis, thyroid dysfunction and allergic conditions such as asthma, urticaria and eczema.

+In the literature there are four models, two common and two minor, proposed to explain the effect of bitters on digestion.
-CEPHALIC VAGAL REFLEX: stimulation of the oropharyngeal bitter receptors acts reflexively to increase saliva and vagal stimulation to the digestive organs.
-LOCAL REFLEX: stimulation of both oropharyngeal and gastrointestinal bitter receptors acts locally to increase digestive secretions.
-ALCOHOL: alcohol, rather than the bitter taste, improves digestion.
-HYPERAEMIA: the major influence of bitters on digestion is improved blood circulation in the abdominal organs. Cited Source:
